Buffy the Vampire Slayer and its spin-off, Angel, centre around the doings of a varied cast of characters which include the titular Slayer and her erstwhile boyfriend, vampire-with-a-soul Angel. Both shows provide fanfic writers with a world of possibilities and avenues to explore.
If I was forced to name a "'ship", that is, the relationship between two characters which I prefer, I'd say Buffy and Angel. Their supernatural, modern-day Romeo and Juliet story is wonderfully romantic. As for favourite characters, well, take a look at the volume of stories featuring Angel himself, or his dark, dangerous, and let's face it, irresistible alter-ego Angelus.

The Prodigal Son - In this alternative universe, Angel saves his son Connor from the grasps of Holtz, and has him adopted. Fifteen years later, Connor seeks out his real father, and gets to know him in a continuing series.
Dust Particles - All the rest! Short fics which don't fit into any of the categories above.
